- Preheat the oven to 350°F. Line a mini muffin pan with cupcake liners.
- Mix together the cake mix, prosecco, oil and egg whites in a large mixer bowl on medium speed for 2 minutes until combined.
- Fill the cupcake liners 2/3 full and bake for 12-15 minutes or until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool before frosting.
- For the prosecco buttercream, beat the butter in a large mixer bowl on medium speed for 3-4 minutes.
- Add the powdered sugar and salt and beat on medium-low speed until incorporated. Add vanilla and enough prosecco until the desired consistency is achieved.
- Beat the buttercream on medium-high speed for 4-5 minutes. Add the food coloring until a light pink color is achieved. Frost the cooled cupcakes and garnish with the strawberries and sprinkles.
Recipe Tip: If the cake mix has large clumps then sift before adding to the mixing bowl for a smooth batter.
