This affordable, delicious recipe puts a fresh spin on a brunch classic! Tricky, time-consuming hollandaise is swapped out for a creamy avocado sauce, and poached eggs (which are easier than they seem to make!) are topped with a Tex-Mex inspired trio of olives, tomatoes and jalapenos.   1. Combine the avocado and lemon juice in a food processor or blender. Blend, scraping down the sides as needed until smooth. With the motor running, slow drizzle in the olive oil until combined. Season with the salt and cayenne pepper. Set aside.
  2. Fill a small pot with water and vinegar and bring to a simmer. Break the eggs into the water and poach until the whites are set and the yolk is still runny, about 3 minutes.
  3. Top the English muffin halves with the ham, poached eggs, avocado mixture, olives, tomatoes and jalapeno (if using). Serve and enjoy.

Substitute: Substitute hollandaise mix for the avocado mixture. For the hollandaise mix, follow the packaged directions.
