Lobster Noodle Casserole

This more sophisticated version of a tuna casserole is perfect for your Valentine's Day meal.

- In a large pot, boil water with a teaspoon of salt. Add the noodles and cook for about 10 minutes.
- While the noodles are cooking, prepare the cream sauce. In a large skillet, over medium heat, melt the butter and cook the shallots until translucent. Add the flour and brown it. Stir around with a wooden spoon. Gently whisk in the milk and combine. Add the seasonings. Let thicken only slightly. Remove from the heat and add the cheese.
- Drain the pasta and mix together with the cheese sauce mixture. Add the lobster meat. Butter the bottom and sides of a casserole dish. Pour the lobster noodle mixture into the casserole dish. Sprinkle the top with Ritz cracker crumbs. Bake in a preheated 375 degree F oven for 10-15 minutes. Or until the cracker crumbs are slightly browned and the mixture is bubbling. Serve immediately.
