‘Tis the season for festive desserts, and these Ginger Cookie Ice Cream Sandwiches are a delightfully easy-to-make holiday treat. With a tasty combination of ice cream, pre-made ginger cookies and chocolate, these ice cream sandwiches are spicy, sweet and ready in a snap. Make them ahead and put them in the freezer for a super simple dessert after a big holiday meal or let the kids help put them together for an extra-special treat.

  1. Scoop the ice cream onto a cookie, top with a second cookie and gently press together. Repeat with the desired number of cookies. Place the ice cream sandwiches onto a parchment paper-lined baking sheet and freeze for at least 15 minutes.

  2. Meanwhile, place the chocolate chips in a microwave safe bowl. Microwave for 30 seconds. Stir and continue to microwave for 15 second intervals, stirring between each interval, until melted and smooth. Allow to cool for 5 minutes.
  3. Rub together the sugar and orange zest in a small bowl using your fingers.

  4. Remove the ice cream sandwiches from the freezer. Dip each one into the melted chocolate and sprinkle with the sugar mixture. Return to the baking sheet and freeze for 30 minutes or until the chocolate is hardened.
