  1. Microwave the chocolate chips in a microwave-safe bowl in 30 second intervals, until melted, stirring in between each interval. Transfer the melted chocolate to a small resealable bag.
  2. To make the graduation caps, arrange the Rolo candies flat-side-down. Snip a corner of a resealable bag. Pipe a small dot of melted chocolate onto each Rolo candy. Place a chocolate square, flat-side-up, on each Rolo candy, pressing to adhere. Pipe a small dot of melted chocolate in the center of each chocolate square. Top each with 1 candy ribbon piece and 1 candy coated chocolate piece for tassels. Set aside to cool.
  3. Arrange the pepper jack, salami, cheddar and prosciutto on a large board or platter. Place the nuts and olives in small bowls on the board. Fill any remaining spaces with the chocolate graduation caps, sliced apples and grapes. Serve with breadsticks and crackers.
