  1. Preheat oven to 350F.
  2. Peel and quarter sweet potatoes and boil for 25 minutes or until done.
  3. Drain, add potatoes back to pot and add eggnog. Beat sweet potatoes with an electric mixture, then put into a 9x9 baking dish.
