This Cowboy Caviar Dip has healthy black eyed peas for a year of good luck. You can even make this adaptable recipe ahead of time and refrigerate it for later.

  1. Rinse and drain the black eyes peas, black beans, and corn. Combine all into a colander, and rinse again. Toss to remove excess liquid. Add the contents to a large mixing bowl.
  2. Pour the diced tomatoes and green chiles into the empty colander, then rinse and toss to drain excess liquids. Add to the large mixing bowl.
  3. Add red onion, cilantro, sugar, and lime juice to the mixing bowl. Toss to coat all of the ingredients equally. Taste, then season with salt and pepper to fit your taste.
  4. Serve immediately with tortilla chips, or cover with plastic wrap and allow it to chill in the refrigerator for at least two hours, up to two days.
