Chipotle Chicken Fajitas

Heat things up with this chipotle chicken fajitas, full of seasoned chicken, onions, bell peppers and chipotle peppers served on a corn or flour tortilla.

- Heat the olive oil and butter in a large cast iron skillet over medium heat. Sprinkle the spices and brown sugar over the chicken and coat well. Cook the chicken until it is browned. Remove the chicken and place on a plate.
- Stir in the onion and bell peppers and cook until softened, about 4-5 minutes. Add the chicken back into the skillet.
- Cut up the canned chipotle peppers into small pieces. Add a few pieces at a time along with a little adobo sauce and stir in, to taste.
- Making sure to coat the chicken, peppers and onions well. Serve on flour or corn tortillas and optional toppings.
