Two Grab-and-Go Breakfast Recipes to Start the Day

Whether you have to rush your children off to school or get yourself down to the office, grab-and-go breakfast ideas make it easier to stay on schedule. Not only that, but nutritious options give you the fuel to make it to lunch without a mid-morning sugar crash.

Make these breakfast to-go recipes ahead of time to ensure your morning goes smoothly. The first recipe doesn't require you to use the stove or oven at all, so count on it for a speedy breakfast solution that even your children can handle.

Homemade Overnight Oats

Ingredients

● 1/2 cup rolled oats

● 1/2 cup low-fat milk

● 1/4 cup Greek yogurt

● 1/4 cup blueberries

● 1 tablespoon honey

Directions

Pour the oatmeal into a container and top with milk.

Add the blueberries, Greek yogurt, and honey.

Leave the oats in the fridge to soak for at least 8 hours, suggests Quaker Oats. This ensures all the liquid is absorbed. If you prefer your oats soft and mushy, use instant oats instead of rolled oats.

Not a blueberry fan? Swap those berries for bananas slices, mango, kiwi, or even shredded coconut. There are plenty of overnight oats ideas out there, so experiment until you find your own unique concoction. 

 

Scrambled Egg Muffins

Ingredients

● 6 eggs

● 1/4 cup chopped onion

● 1/4 cup chopped green pepper

● 1/3 cup shredded cheddar cheese

● Salt and pepper to taste

Directions

Preheat the oven to 350 degrees Fahrenheit and lightly grease six muffin cups.

Beat the eggs in a bowl and stir in the other ingredients.

Fill each muffin cup about halfway with the mixture.

Bake for about 20 minutes, or until an inserted knife comes out clean.

 

Want to add a little more protein to this easy on-the-go breakfast? Experiment with adding cooked bacon bits, chopped spinach, or even mushrooms before baking. For the adventurous, adding a little bit of red pepper flakes can make for a spicy start to the morning. Just be sure to have a glass of milk handy to wash it down.
