- Sprinkle with unsalted peanuts for some added crunch (and protein).

- Cut an avocado in half and remove the pit. Slice the avocado into ¼ inch slices and layer on the arugula.
- Thinly slice a tomato and place on top of your avocado.
- Top each slice of bread with 2 slices of bacon and a sunnyside up egg.
