5 Lucky Recipes for Your St. Patrick's Day

Bring a little luck to your St. Patrick's Day with these delicious dishes. We're not talking the cliche corned beer and cabbage. We're talking recipes like chicken and avocado wraps, zucchini pasta, spinach and mozzarella chicken wraps and slow-cooker cilantro lime tacos. Not only will these dishes add a splash of festive green to your day, they'll also bring a smile to everyone's face — and maybe even add a bit of charm too.
Chicken and Avocado Wraps
Ingredients:
- 1/2 cup chicken broth
- 1 pound chicken strips
- Flour tortillas
- 2 ripe avocados
- 1/2 cup baby spinach leaves
- 1 container plain Greek yogurt
Directions: Pour the chicken broth into a skillet and brown the chicken. While cooking, prepare tortillas according to the package or press lightly in a grill. Then, slice avocados and wash baby spinach leaves.
Once the chicken is grilled, place chicken in tortillas, top with avocados, spinach and a dash of Greek yogurt. It's a quick and healthy lunch filled with good luck!
Broccoli, Beef & Rice
Ingredients:
- 1 pound thin sirloin steak
- 1/2 cup and + 3 TBS soy sauce
- 2 TBS flour
- 1 cup chicken broth
- 1/4 cup brown sugar
- 1 TBS vinegar
- 4 cups broccoli florets steamed
- 3 cups cooked brown rice
- 1 TBS olive oil
- 3 cloves garlic minced
Directions:
First, add 3 tablespoons soy sauce and 1 tablespoon flour to a large Ziplock bag. Add the steak and mix well. Keep the steak in the bag and place in the refrigerator to marinate while you make the rest of the dish.
Combine 1/2 cup soy sauce, 1 tablespoon flour, chicken broth, brown sugar and vinegar in a bowl and mix well. Set aside.
At this stage, be sure to have the broccoli steamed and the rice cooked and sitting aside. In a large skillet, heat olive oil and add in minced garlic and marinated steak. Cook steak through, turn down the heat and pour in sauce mixture. Stir together and let thicken for a few minutes.
Add the steamed broccoli to cooked rice and top with steak and sauce. A hearty dinner with a green twist!

Zucchini Pasta
Ingredients:
- 3 zucchini
- 1 TBS olive oil
- 1/4 cup sliced leeks
- 1/2 cup sliced tomatoes
- 1 sliced avocado
- salt and pepper
Directions: First, create spirals with the zucchini using a spiralizer. This tool can be found online or in most stores. Then, heat oil on a skillet. Toss in the sliced leeks (for a stronger flavor use onions) and cook until translucent. Then, toss in the zucchini noodles.
Continue to toss the noodles until they are heated through (about 3 minutes) and remove from heat. Top with sliced tomatoes, avocado and salt and pepper to taste. A healthy meal with a lot of green!
Spinach & Mozzarella Chicken Wraps
Ingredients:
- 1 pound chicken breasts
- 1/2 cup Mozzarella cheese grated
- 1 cup baby spinach
- 2 eggs
- 1/2 cup breadcrumbs
- 1/2 cup melted butter
Directions: Preheat oven to 375.
First, lay out the chicken breasts on a hard surface and cover with plastic wrap. Next, beat the chicken breasts with a rolling pin to thin them out to about 1/4 inch. Set aside. In a food processor, pulse grated mozzarella cheese and baby spinach leaves. Place the mixture in the chicken breasts and roll them, secure with a toothpick.
In a bowl, stir the eggs and set aside. In another bowl, place the breadcrumbs. Dip the rolled chicken in the egg mixture and then into the breadcrumbs being sure to completely coat them.
Cover a baking sheet with about 1/4 cup melted butter and place the coated chicken on the baking sheet. Once all of the chicken is on the baking sheet, pour the remaining melted butter on top.
Bake until cooked through (about 40 minutes). This is a delicious dish sure to please and bring good luck!
Slow Cooker Cilantro Lime Tacos
Ingredients:
- 2 lbs chicken breasts (or strips to make shredding easier)
- 1 package taco seasoning
- 2 limes
- 3/4 cup cilantro
- Sliced tomatoes
- Plain Greek yogurt
- Shredded lettuce
Directions: Place the chicken strips in the slow cooker and cover in taco seasoning. Add about half of the water required on the taco seasoning package, then squeeze the juice of two limes over the chicken. Mix well and coat the chicken.
Cook on high for 4 hours. Then, shred the chicken with a fork inside the slow cooker and add to your favorite taco shells. Top with favorites such as avocado, fresh tomatoes, shredded lettuce, Greek yogurt and a little more cilantro. Lots of taste and a whole lot of luck!
