Mexican Street Corn Dip

Summertime is the perfect time to pick up fresh seasonal corn from your local Food Lion. And besides steaming or boiling your ears of corn, you can also grill them, which is exactly how to prepare it for our first dip recipe - Mexican Street Corn Dip.

Made with red onion, jalapeno pepper, mayonnaise, Greek yogurt, lime, queso fresco, cilantro, seasonings and, of course, grilled corn, this dip is smoky, fresh and cheesy. Plus, it pairs really well with our store-made tortilla chips. Snag the full recipe here

And while you have your grill preheated and ready to go, you can also try one of these Mexican-inspired grilled dishes for the main course:

Tex Mex Guacamole

During the summer months, you’ll also see a great selection of avocados at your neighborhood Food Lion. Guacamole is the perfect way to utilize these creamy and earthy pieces of produce. Typically served as a dip with tortilla chips, you can also top grilled meats like steak, chicken and fish with this Tex Mex Guacamole. Take our Grilled Salmon Burgers with Avocado Salsa recipe for example. You could easily swap the avocado salsa for this easy dip recipe

To make it, you may need to add the following ingredients to your grocery shopping list: canned corn, black beans, avocado, onion, cilantro, lime, salt and garlic powder. You can also add some jalapeno pepper for a little kick. And that’s it! With eight ingredients, this tasty and affordable dip recipe can be made in 10 minutes and for under $10. Three Cheese Cauliflower Queso, tortilla chips, cilantro, choppeed peppers

Three Cheese Cauliflower Queso

Although this easy dip recipe isn’t made with grilled ingredients or seasonal summertime produce, it still goes really well with grilled Mexican-inspired meals like fajitas and the dishes we suggested with the Street Corn Dip above. Plus, it’s a great way to sneak some vegetables into your family’s meal if they aren’t the biggest fans.

Now, grab your favorite tortilla chips or warm flour tortillas and get ready to make a new kind of queso that’s zesty and made with roasted cauliflower. You’ll also need three varieties of cheeses, two kinds of spicy peppers, onion, tomatoes, cilantro, garlic, scallions, heavy cream and cornstarch, plus some olive oil and spices. Veggie Pizza Dip

For our fourth dip recipe, let’s take a quick break from the Mexican flavors and try something with an Italian spin. This Veggie Pizza Dip is sure to be a big hit with your whole family if they’re huge pizza lovers. And let’s face it - who isn’t?

This dip can be prepared, cooked and on the table in about 40 minutes and is made with diced veggies, marinara sauce, cheese and spices. But, if you want to make it heartier, add some ground Italian sausage or pepperoni. Then, it’s ready to serve with toasted premade pizza crust, cut into triangles or 2-inch wide strips. With these meaty additions, you can even enjoy this dip as an entrée.

However, as an appetizer, this easy dip recipe goes perfectly with pasta meals, as well as grilled dishes like these:

Fire-Roasted Tomato & Peach Salsa, bowl

Fire-Roasted Tomato & Peach Salsa

Last, but definitely not least, is an easy dip recipe that incorporates the sweet, fuzzy summer fruit - peaches! In 10 minutes or less, you can have our Fire-Roasted Tomato & Peach Salsa recipe ready to serve. And with only eight ingredients, plus the tortilla chips for dipping, it’s pretty low-cost to make too!

For this salsa, you will add the fire-roasted tomatoes, chopped peach, lime juice, jalapeno pepper, red onion, garlic, salt and cilantro to a food processor or blender. Then, pulse until combined, but still chunky. Or for a more pico de gallo-style dip, skip the blending and instead, chop your fresh produce finely and mix all of the ingredients together in a bowl. You can also choose to grill your peaches for some added smokiness. Just make sure to let them cool in the refrigerator for about 10 minutes before chopping and adding to your salsa.

With these five easy dip recipes, you’re ready to try a new and tasty appetizer that makes the most of the seasonal produce and grilled foods we all love to enjoy during the summer months. And before you head to your neighborhood Food Lion, keep this tip in mind! On top of our everyday low prices, you can save even more when you choose our private brands when shopping for your ingredients. Now, it’s time to decide which dip recipe to make, pick up what you need and get cooking (or chopping)!
