Fresh, low-cost zucchini is paired with a garlic yogurt dipping sauce made using only a few simple ingredients to create a winning combo of delicious and affordable.

- Toss the zucchini and salt together in a colander. Let the zucchini drain for 5 minutes. Press the zucchini with paper towels to release excess liquid.
- Combine the zucchini, mozzarella, corn, flour, 3 tablespoons of chives and egg in a medium bowl. Portion the zucchini mixture into 8 to 10 patties.
- Heat 1 tablespoon of oil in a large nonstick skillet over medium-high heat. Working in batches, fry the patties until golden brown, about 2-3 minutes per side. Repeat with the remaining patties and remaining oil.
- Meanwhile, combine the yogurt, remaining chives and garlic in a small bowl. Serve the yogurt mixture with the fritters and enjoy.
Recipe Tip: For a healthier option, cook fritters in the air fryer! Simply grease an air fryer basket with nonstick cooking spray. Preheat the air fryer to 400°F. Working in batches, place patties into the air fryer basket. Cook for 9-10 minutes, flipping halfway through until golden brown.
