Made with sweet, colorful yams, these patties are delicious served as an appetizer, first course, or as a vegetarian main course.Be sure to use the dark-skinned, orange-fleshed "sweet potatoes." And fresh-squeezed orange juice is the key to the tastiest sauce.

  1. Whisk together all the sauce ingredients in a small bowl. Taste and adjust the seasoning. Set aside.
  2. To make the patties, heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the yam, onion, celery, and garlic. Cook, stirring occasionally, until tender, about 5 minutes. Remove from the heat and stir in the remaining ingredients.
  3. For each patty, gently squeeze about 1 tablespoon of the mixture in your hand to form a ball, then flatten into a 2-inch round patty. Place the patties on a plate as they are prepared.
  4. Wash and dry the skillet. Heat the remaining 1 tablespoon oil over medium-high heat. Cook the patties for about 3 minutes on each side, or until lightly brown. Transfer to a plate. Serve the sauce in a small bowl for drizzling it over the warm patties.
