Directions

1. In a large saucepan over medium heat melt the butter. Add the flour and stir with a wooden spoon for 1-2 minutes. Add the milk and whisk in to make sure there are no lumps.
2. Add the prepared mustard, paprika, onion powder, garlic powder, salt and black pepper and stir.
3. Remove from the heat and add the shredded cheese. Stir in the drained spinach.
4. Add a few drops of green food coloring, if desired and stir to incorporate. For even more dramatic look add either broccoli florets or cauliflower. Serve immediately.
