- Preheat the oven to 375°F and grease a 9x13 inch baking dish. Toss the shrimp, vegetables and teriyaki sauce together in a large bowl until coated. Place the rice into the prepared baking dish. Drizzle with the oil and toss to coat. Spread the rice out in an even layer. Top evenly with the shrimp mixture.
- Bake until the shrimp just turns opaque, and the vegetables are tender, about 25-30 minutes. Garnish with the green onions and serve.
Recipe Tip: Add 1 tablespoon of Sriracha or hot sauce to the shrimp in step 1 for a spicy twist!
