Teriyaki Chicken Stir Fry

Tender, juicy chicken, nutritious peas and carrots, plus slightly sweet baby corn tossed in teriyaki sauce and served over white rice with crunchy chow mein noodles. Sounds pretty delicious, right? And you would think making this tasty Asian meal would take a while. But, this stir fry only takes 20 minutes to make from start to finish. And for a sweet twist, feel free to add crunch pineapple to your stir fry as well.

- Cook the rice according to package directions. Set aside.
- Cut the chicken breasts into bite-sized pieces. Heat the olive oil in a large skillet over medium heat. Add the chicken and season with the salt and pepper, if desired. Cook for 4-5 minutes, stirring occasionally. Add the teriyaki sauce, peas and carrots, water chestnuts, and baby corn and continue cooking 2-3 minutes until the vegetables are warmed through.
- Serve the teriyaki chicken stir fry with the cooked white rice and garnish with the chow mein noodles
