These protein-packed black bean veggie burgers help stretch your budget by using just a handful of economical ingredients, like sweet potatoes, beans and rice. Meatless Monday never tasted so good or saved you so much!

  1. Cover the potatoes with cold water in a large saucepan. Bring to a boil over high heat and cook until fork-tender, about 15 minutes. Drain and let cool.
  2. Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper. Using a potato masher, mash the potatoes, rice and beans together until loosely combined (a few lumps will remain).
  3. Add the flour, cumin, paprika and salt and mash to combine. Lightly grease hands with nonstick cooking spray. Form the potato mixture into 8 patties.
  4. Place the patties on the prepared baking sheet and bake, flipping the patties halfway through until golden brown, about 30-45 minutes.
  5. Spread the special sauce on the bottom half of each bun. Top with the potato patties, lettuce, onion and bun lid. Serve and enjoy.

Recipe Tip: Create your own special sauce! Whisk 1/4 cup of ketchup, 1 tablespoon of mustard and 2 teaspoons of sweet pickle relish together in a small bowl until combined.

Substitute: Use chickpeas, kidney beans or navy beans in place of the black beans
