Summertime means fresh berries, and this super-easy icebox cake is the perfect way to incorporate a generous serving of berries into your next dessert!

  1. In a bowl, beat the cream cheese until it's smooth. Fold in the whipped cream. Place a very thin layer of the mixture on the bottom of a 9x11 pan. Take the remainder of the mixture and divide it into three portions.
  2. In the pan, place whole graham crackers in a layer on top of the cream cheese/whipped cream mixture. (Use small pieces of graham cracker to fill in small spaces as needed.)
  3. Spread one portion of the cream cheese/whipped cream mixture on top of the graham cracker layer.
  4. Spread 1 ¼ cup of berries on top of the cream cheese/whipped cream mixture.
  5. Add another layer of whole graham crackers.
  6. Spread another portion of cream cheese/whipped cream on top of the crackers.
  7. Spread another 1 ¼ cup of berries on top of the cream cheese/whipped cream mixture.
  8. Add another layer of whole graham crackers.
  9. Top with the remainder of the cream cheese/whipped cream and place the remaining ½ cup of berries on top.
  10. Refrigerate for 4 to 6 hours before serving.
