- Prepare the jambalaya rice mix according to the package directions.
- Heat the oil in a large skillet over medium heat. Add the onion and cook for 3-4 minutes or until softened. Add the sausage and cook for 5-6 minutes or until lightly browned.
- Divide the rice between four bowls. Arrange the sausage and onions, black beans, corn, tomatoes, shredded cheese and avocado over the rice. Top with sour cream and garnish with cilantro. Serve immediately.
