Irish Beef Stew is a classic dish many make as a part of their St. Patrick’s Day celebrations with their family. And this recipe makes meal prep simple since it’s made in a slow cooker. To start, you’ll brown your beef roast, then add the remaining ingredients to the pot, including dark Irish stout beer, tomato paste and beef broth, as well as fresh onion, garlic, potatoes, carrots and thyme. After four to eight hours, you’ll have a flavorful and hearty stew recipe to serve for lunch or dinner.

- Combine salt, pepper and flour in a shallow dish and whisk to combine. Toss beef cubes in flour mixture until well-coated. Melt butter in a large pot over medium-high heat. Working in batches, brown meat on all sides.
- Transfer browned beef and any accumulated juices to a slow cooker. Reduce heat to medium and cook onion and garlic until fragrant. Add tomato paste and cook 1 minute, scraping up any browned bits on the bottom of the pan. Transfer mixture to slow cooker.
- Add beer, carrots, potatoes, beef broth and thyme to slow cooker. Cook on high for 4 hours, or on low for 8 hours, until beef is tender and falling apart.
