Skewered Cantaloupe

Think BBQ Sauce doesnâ t belong on fruit? Think again. Then slice up some cantaloupe, whip together a batch of watermelon BBQ sauce, then slather it on and throw it on the grill for this delightful side dish.

  1. First, prepare the BBQ sauce. Heat the oil in a pot over medium heat and add the onions and garlic, sautéing for a few minutes or until tender.
  2. While the onion cooks, add watermelon to a food processor or blender and puree. When the onions are done cooking, add the pureed melon and all remaining ingredients and stir to combine.
  3. Simmer for 30 minutes, then allow to cool slightly before transferring to a jar for serving or storage. If a smoother consistency is desired, use a food processor or blender to puree the sauce.
  4. Then slice the cantaloupe into wedges, rind removed, and skewer with pre-soaked skewers. Place on the grill over medium-high heat for 15 minutes or until grill marks appear, flipping once halfway through. Just before finished cooking, brush on a bit of BBQ sauce, then remove from heat. Pour more sauce on top and serve immediately warm or at room temperature.
