- Preheat the oven to 375°F, and grease and line a rimmed baking sheet with parchment paper. Combine the oats, flour and baking powder in a food processor or blender and blend until a fine powder.
- Add 2 bananas, milk, eggs, sugar and butter and blend, scraping down the sides as needed until just combined.
- Pour the batter in an even layer into the prepared baking sheet. Bake until light golden brown, or until a toothpick inserted into the center comes out clean, about 20-25 minutes. Cut the pancake into squares.
- Cut the remaining bananas into 1/4-inch rounds. Top the pancakes with the bananas, yogurt, blueberries and syrup. Serve and enjoy.
Recipe Tip: To yield the best results, bake the pancakes in a 13x18 inch rimmed baking sheet.
