  1. Preheat the oven to 375°F and grease a 12-cup muffin tin. Place the spinach in a clean kitchen towel and squeeze out any excess moisture.
  2. Whisk the eggs, spinach, pepper and cheese together in a large bowl until combined. Season with the salt.
  3. Pour the egg mixture evenly among the prepared muffin cups, filling each about three-quarters full. Bake until the eggs are set, about 20 minutes. Top with the parsley and serve.
