Sweet roasted beets and peppery arugula greens come together in this colorful quiche to form a rich flavor that’s easy to love and hard to forget. Plus, using pre-made pie crust makes this recipe for the classic brunch pie a cinch.

- Preheat oven to 375 degrees.

Spread pie crust into a 9” pie plate, trimming excess pastry from edges. Press firmly into pan.

Arrange sliced beets in a single layer atop crust.

Top beets with chopped greens.

Add goat cheese to pie plate in rounded teaspoons.

In an electric mixer fitted with a whisk attachment, beat eggs, milk, and salt and pepper until frothy.

Pour egg mixture into crust.
- Bake for 35-40 minutes, until crust has browned and eggs are set.
