Sweet roasted beets and peppery arugula greens come together in this colorful quiche to form a rich flavor that’s easy to love and hard to forget. Plus, using pre-made pie crust makes this recipe for the classic brunch pie a cinch.

  1. Preheat oven to 375 degrees.
  2. Spread pie crust into a 9” pie plate, trimming excess pastry from edges. Press firmly into pan.
  3. Arrange sliced beets in a single layer atop crust.
  4. Top beets with chopped greens.
  5. Add goat cheese to pie plate in rounded teaspoons.
  6. In an electric mixer fitted with a whisk attachment, beat eggs, milk, and salt and pepper until frothy.
  7. Pour egg mixture into crust.
  8. Bake for 35-40 minutes, until crust has browned and eggs are set.
