Rice Krispies® Ice Cream Sandwiches

These cheery ice cream sandwiches are as yellow-as-the-sun and are the perfect sunshine-y summer treat!

In a large saucepan, melt the butter over low heat. Add the marshmallows and stir until completely melted.

Remove from heat. Stir in the vanilla and the yellow food coloring.

Add the KELLOGG's Rice Krispies cereal.

Stir until well-coated.

Using a buttered spatula or wax paper, evenly press the mixture to a ¼-inch thickness on a large baking sheet that has been coated with cooking spray.

Decorate with sprinkles. Refrigerate for 15 minutes.

Using a cookie cutter that has been coated with cooking spray, cut the Rice Krispies mixture into circles.

Place a small scoop of ice cream on the undecorated side of one of the circles.

Top with another circle, decorated-side up. Gently press them together to create the sandwich.

Sprinkle yellow sanding sugar around the edge of each sandwich.

Repeat with the remaining cut-outs and the remaining ice cream.

Return to the baking sheet. Freeze for 30 minutes. Transfer to an airtight container. Freeze for 2 hours to 1 week. Let stand at room temperature for 10 minutes before serving. Enjoy!!
