Mississippi Pot Roast, which was invented by a mom from Mississippi in the ‘90s, is a tender and budget-friendly chuck roast seasoned with ranch dressing mix and stewed with brown gravy and broth for a deeply savory taste at a cost-conscious price. The cooked meat freezes really well and makes great leftovers to help stretch your budget even further!

  1. Season the beef evenly with the ranch mix. Turn the pressure cooker to the sauté setting. Heat the olive oil and add the beef. Sear for 3-4 minutes on each side until golden brown.
  2. Add the broth, butter, gravy mix and pepperoncini. Lock the pressure cooker lid, turn off the sauté setting and set a 40-minute cook time at high pressure. Once the cooking is done, let the pressure cooker sit without opening for 15 minutes before releasing the pressure valve. Shred the beef into bite-sized pieces using forks.
  3. Serve the shredded beef on toasted rolls. Top with the provolone and pepperoncini.

Recipe Tip: Make it in the slow cooker! Place the seared beef in a 6-quart slow cooker. Add the broth, butter, gravy mix and pepperoncini. Cover and cook on high for 4 hours, or on low for 6 hours, until tender. Shred and serve.
