  1. Place the pork in a 6 quart slow cooker. Add the water. Cover and cook on high for 4 hours, or on low for 8 hours, until the meat is tender. Shred the pork into bite-sized pieces using forks.
  2. Heat the butter in a large nonstick skillet over medium-high heat. Stir in the eggs and scramble, stirring constantly until just set, about 30 seconds. Season with the salt and pepper. Remove from the heat.
  3. Top each tortilla with the pulled pork, scrambled eggs, cheddar, salsa and cilantro. Serve and enjoy.

Recipe Tip: Make the pulled pork a day ahead! Simply cook the pork and refrigerate until ready to use. Reheat the pork in a large skillet over medium heat until fully heated through. Serve and enjoy!
