One-Pan Maple Mustard Roast Chicken

Perfect for smaller groups at the Christmas dinner table, this roasted chicken dish is packed with flavors that will leave the whole family feeling merry. Made with chicken drumsticks and red potatoes with a maple Dijon sauce and fresh thyme, all you’ll need are some vegetables, dinner rolls and of course, dessert for a complete holiday meal. But feel free to substitute the drumsticks for chicken breasts if you prefer the white meat of the bird.

- Preheat the oven to 400°F. Season the chicken on both sides with 1 1/2 Tsp. of the kosher salt and 1/2 Tsp. of the black pepper. Drizzle with half of the olive oil and place on one side of a rimmed baking sheet.
- Place red potatoes on the other side of the baking sheet and toss to coat with the remaining kosher salt, black pepper and olive oil. Transfer the baking sheet to the preheated oven and cook for 35 to 40 minutes, or until the chicken reaches an internal temperature of 170°F and the potatoes are golden-brown on the outside and tender on the inside.
- While the chicken cooks, whisk together the maple syrup, mustard and thyme. Baste chicken with the maple-mustard sauce every few minutes during the last 10 to 15 minutes of cooking.
- Garnish with more fresh thyme and serve.
Recipe Tip: When substituting chicken breasts for drumsticks, cook until the internal temperature reaches 160°F.
