- Preheat the oven to 400°F and line a rimmed baking sheet with aluminum foil or parchment paper. Melt 2 tablespoons of the butter in a large skillet over medium-high heat. Add the mushroom and cook, stirring occasionally until tender and golden brown, about 8-9 minutes. Stir in the spinach and cook until wilted, about 2-3 minutes. Remove from the heat and let cool to room temperature. Combine the mushroom mixture and cheddar in a large bowl.
- Halve the turkey breast horizontally, keeping one long side attached; open the halves like a book. Stuff the turkey breast, cut side up, with the mushroom mixture leaving a 1/2-inch border. Roll up the turkey lengthwise and tie with kitchen twine. Brush the skin with the remaining butter. Season with the salt and pepper. Transfer to the prepared baking sheet.
- Place the turkey in the oven. Reduce the temperature to 350°F and roast until the skin is golden brown and the internal temperature reaches 165°F, about 35-50 minutes. Allow to rest before slicing.
