A big holiday centerpiece, like a juicy, savory roast, almost always yields leftovers. Stretch that into a second dinner with this budget-friendly casserole! It’s creamy and cheesy, with a helping of veggies tucked in there, too, for a complete, affordable meal in no time.

- Preheat the oven to 350°F. Lightly grease a 9x13 inch baking dish with cooking spray.
- Bring a large pot of water to boil. Add the broccoli and cook for 2-3 minutes. Drain and set aside.
- Mix the soup, milk and cheese in a large bowl. Add the beef and broccoli and mix to combine. Spread the mixture evenly in the prepared baking dish.
- Mix the bread crumbs, butter, garlic powder and parsley in a small bowl. Sprinkle over the casserole. Bake for 20-25 minutes or until heated through and the bread crumbs are golden brown.
Substitute: If using frozen broccoli florets, substitute the fresh broccoli with 1 thawed (16 oz.) bag.
