A big holiday centerpiece, like a juicy, savory roast, almost always yields leftovers. Stretch that into a second dinner with this budget-friendly casserole! It’s creamy and cheesy, with a helping of veggies tucked in there, too, for a complete, affordable meal in no time.

Directions

  1. Preheat the oven to 350°F. Lightly grease a 9x13 inch baking dish with cooking spray.
  2. Bring a large pot of water to boil. Add the broccoli and cook for 2-3 minutes. Drain and set aside.
  3. Mix the soup, milk and cheese in a large bowl. Add the beef and broccoli and mix to combine. Spread the mixture evenly in the prepared baking dish.
  4. Mix the bread crumbs, butter, garlic powder and parsley in a small bowl. Sprinkle over the casserole. Bake for 20-25 minutes or until heated through and the bread crumbs are golden brown.

Substitute: If using frozen broccoli florets, substitute the fresh broccoli with 1 thawed (16 oz.) bag.
