This traditional Irish stew combines large pieces of lamb or beef, hearty vegetables and potatoes drizzled with a flavorful herb butter. Get the recipe to create a Traditional Irish Stew for St. Patrick's Day - or any day of the week for a hearty dinner!

  1. In a large, heavy pot, heat the oil and the butter over medium-high heat. Add the onions and cook until softened.
  2. Add the lamb or beef and cook until browned on all sides.
  3. Add the garlic.
  4. Add the beef stock or chicken stock. Add the thyme. Add the salt and pepper. Reduce to a simmer.
  5. Cover and cook on low heat for 90 minutes, stirring occasionally
  6. Add in the potatoes, the carrots, and the parsley and continue to simmer, uncovered, until they are soft, about 45 minutes to an hour.
  7. If you feel your stew is too thin, you can add a little flour to thicken it; if it’s too thick, add a little water.
  8. Remove the thyme sprigs before serving.
