This traditional Irish stew combines large pieces of lamb or beef, hearty vegetables and potatoes drizzled with a flavorful herb butter. Get the recipe to create a Traditional Irish Stew for St. Patrick's Day - or any day of the week for a hearty dinner!

- In a large, heavy pot, heat the oil and the butter over medium-high heat. Add the onions and cook until softened.
- Add the lamb or beef and cook until browned on all sides.
- Add the garlic.
- Add the beef stock or chicken stock. Add the thyme. Add the salt and pepper. Reduce to a simmer.
- Cover and cook on low heat for 90 minutes, stirring occasionally
- Add in the potatoes, the carrots, and the parsley and continue to simmer, uncovered, until they are soft, about 45 minutes to an hour.
- If you feel your stew is too thin, you can add a little flour to thicken it; if it’s too thick, add a little water.
- Remove the thyme sprigs before serving.
