Irish Soda Bread Biscuits

No St. Patrick’s Day meal is complete without Irish soda bread! This herbal, cheesy version (which is extra-affordable, thanks to Food Lion brand ingredients) is a creative twist on the traditional version with the addition of dried cranberries in the batter and a lovely honey butter for serving.

- For biscuits: Preheat the oven to 375°F and line a rimmed baking sheet with parchment paper. Whisk the flour, salt, baking soda, sugar and thyme together in a large bowl. Using your hands or a pastry cutter, cut the butter into the dry ingredients to form pea-sized pieces. Stir in the cheddar and cranberries until combined.
- Whisk the buttermilk and egg together in a separate large bowl. Add the wet ingredients to the dry ingredients. Stir together until the dough is too stiff to stir with a spoon.
- On a lightly floured surface, gently work the dough into a ball, kneading until it just comes together. Divide the dough into 12 balls. Using a knife, score an X on top of each dough ball. Place 1 1/2 inches apart onto the prepared baking sheet. Bake until golden brown, about 15-20 minutes.
- For honey butter: Meanwhile, using a hand mixer, beat the butter and honey together until combined. Serve with the biscuits and enjoy.
Substitute: Substitute 1/2 cup of raisins for the dried cranberries!
