You don’t need the luck ‘o the Irish to put an affordable and crowd-pleasing meal on the table. This robust, tasty stew requires just seven budget-friendly ingredients and is a warming, comforting treat on a chilly night. It also makes fantastic leftovers, which means tomorrow’s lunch or dinner is already done, and paid for!

  1. Preheat the oven to 300°F. Heat a large Dutch oven over medium heat. Add the bacon and cook, stirring occasionally until the fat renders, about 8 minutes. Increase the heat to medium-high. Add the sausage and cook, stirring occasionally until the bacon and sausage are golden brown, about 8-10 minutes. Using a slotted spoon, remove the bacon and sausage. Transfer to a plate.
  2. Drain the fat from the Dutch oven. Add the onions and cook for about 3 minutes. Return the sausage and bacon to the Dutch oven. Add the potatoes and broth and bring to a simmer over medium heat. Cover with the lid.
  3. Transfer to the oven and bake until the onions are very tender, the sausage is fully cooked and the broth has reduced by about half, about 2 hours.
  4. Garnish with the fresh parsley. Serve with the biscuits and enjoy.

Recipe Tip:  Add a 1/4 cup of stout beer before transferring to the oven to create a more traditional stew!
