You don’t need the luck ‘o the Irish to put an affordable and crowd-pleasing meal on the table. This robust, tasty stew requires just seven budget-friendly ingredients and is a warming, comforting treat on a chilly night. It also makes fantastic leftovers, which means tomorrow’s lunch or dinner is already done, and paid for!

- Preheat the oven to 300°F. Heat a large Dutch oven over medium heat. Add the bacon and cook, stirring occasionally until the fat renders, about 8 minutes. Increase the heat to medium-high. Add the sausage and cook, stirring occasionally until the bacon and sausage are golden brown, about 8-10 minutes. Using a slotted spoon, remove the bacon and sausage. Transfer to a plate.
- Drain the fat from the Dutch oven. Add the onions and cook for about 3 minutes. Return the sausage and bacon to the Dutch oven. Add the potatoes and broth and bring to a simmer over medium heat. Cover with the lid.
- Transfer to the oven and bake until the onions are very tender, the sausage is fully cooked and the broth has reduced by about half, about 2 hours.
- Garnish with the fresh parsley. Serve with the biscuits and enjoy.
Recipe Tip: Add a 1/4 cup of stout beer before transferring to the oven to create a more traditional stew!
