Directions

  1. Soak the skewers in water for at least 30 minutes.
  2. Meanwhile, place the chicken in a resealable plastic bag. Add the oil, honey, lemon and garlic. Massage the mixture into the chicken to cover completely. Marinate at room temperature for at least 1 hour, or refrigerate overnight.
  3. Remove the chicken from the marinade. Thread the skewers with the chicken, pineapple, red onion and bell peppers, alternating ingredients evenly.
  4. Preheat the air fryer to 360°F. Lightly coat the air fryer basket with the cooking spray.
  5. Working in batches, place the skewers in the air fryer basket. Cook for 10-15 minutes until the chicken is golden brown and the vegetables are tender, or until the chicken reaches an internal temperature of 165°F. Serve and enjoy.

Recipe Tip: Bake the kabobs at 400°F on an aluminum foil- or parchment paper-lined rimmed baking sheet until fully cooked, about 10-15 minutes! Or, grill the kabobs on medium-high heat, turning occasionally until golden brown and fully cooked, about 10-15 minutes.

Substitute: Substitute Hawiian BBQ sauce, teriyaki sauce, balsamic vinaigrette or your favorite marinade for the olive oil, honey, lemon juice and garlic!
