Dive into a flavorful baked seafood dish for a family dinner this week. Made with cod fillets, tomatoes, parsley, thyme and capers, this entrée is light and buttery with a pop of freshness from the herbs. Plus, it comes together in 30 minutes, which makes it is a great choice for busy days. Serve with rice or orzo and steamed vegetables. And for the adults in the family, cod pairs really well with a glass of Sauvignon Blanc, like Debonair brand.

Directions

  1. Preheat the oven to 400°F. Arrange the cod in a 9x13 baking dish and sprinkle the cherry tomatoes on and around fish.
  2. Whisk together the melted butter, olive oil, garlic, parsley, thyme, salt and pepper in a small bowl. Brush the fish with the mixture and pour the rest around the fish. Sprinkle with the capers.
  3. Bake for 15-20 minutes or until the fish flakes easily. Spoon the juices over the fish to serve.

Recipe Tip: Begin checking the fish for doneness at the 15-minute mark. The cod is ready when it’s opaque and easily flakes with a fork.
