Hunan chicken doesn't have to be loaded with calories. This recipe give the same flavor of your take-out favorite, but with less guilt.

- Stir soy sauce, ketchup, hoisin, honey, sherry, cumin, and cayenne together; set aside.
- Season chicken pieces with salt. Add 2 tablespoons broth to a large saute pan or wok and set over medium-high heat.
- Once broth is bubbling, add in chicken pieces. Stir as it cooks, covering occasionally to keep the juices in. If the pan gets dry, add more broth.
- Once the chicken is no longer pink, just cooked through, add in the ginger and garlic- cook for 1 minute then add in spinach. Toss and cover; cook until spinach is wilted then add in prepared sauce and toss to coat.
- Serve over cooked rice.
