  1. Bring a large pot of water to a boil. Carefully place potatoes and sweet potatoes in the boiling water and cook for 10 minutes. Remove from water and repeat with the beets (cooking separately keeps beets from staining potatoes).
  2. When all vegetables have been boiled and are cool enough to handle, slice in ½” thick rounds. Then, using small cookie cutters or a paring knife, cut the rounds into Halloween shapes like bats, pumpkins, hats and the like.
  3. When shapes are all cut out, place in a bowl and toss with oil, salt, thyme and garlic powder until evenly coated. Transfer to a baking sheet and bake for 30 minutes at 350 degrees.
  4. When vegetables are tender, remove from the oven, add pepper to taste, and serve warm.
