- Bring a large pot of water to a boil. Carefully place potatoes and sweet potatoes in the boiling water and cook for 10 minutes. Remove from water and repeat with the beets (cooking separately keeps beets from staining potatoes).
- When all vegetables have been boiled and are cool enough to handle, slice in ½” thick rounds. Then, using small cookie cutters or a paring knife, cut the rounds into Halloween shapes like bats, pumpkins, hats and the like.
- When shapes are all cut out, place in a bowl and toss with oil, salt, thyme and garlic powder until evenly coated. Transfer to a baking sheet and bake for 30 minutes at 350 degrees.
- When vegetables are tender, remove from the oven, add pepper to taste, and serve warm.
