Grilled Summer Squash with Feta and Mint

You might not have thought to pair mint and feta with squash, but when combined with the smoky flavor of these grilled veggies, it's a winning combination. Plus it only takes 15 minutes to prepare, making it the perfect side dish for summertime BBQ's.

  1. Place the squash and zucchini in a large bowl and drizzle with oil, then toss until everything is evenly coated.
  2. Arrange the squash and zucchini rounds on a grill grate over medium heat. Grills vary, so adjust the flame as needed. As each slice begins to blacken on one side, flip and allow to cook for another couple of minutes, 2-5 minutes per side, depending on your grill.
  3. When both sides of the squash and zucchini are soft and have dark grill marks, remove from heat and return to the large bowl. Top with feta, mint, salt and pepper and toss gently to combine. Transfer to a serving dish and serve immediately while hot.
