Directions

  1. Prepare all your fruit for grilling.
  2. Sugaring the fruit is optional; it helps it to caramelize during grilling, but increases the potential to burn, so be vigilant. If you decide to sugar the fruit, place 1 cup sugar in a bowl and dip each piece of fruit in the sugar.
  3. Pre-oil your grill and pre-heat to medium-high heat. You can choose to grill using wooden skewers.
  4. You can also grill them directly on the grill (this method results in better grill marks). The fruits take about 5 to 8 minutes; turn them once while grilling and keep an eye on them. Different fruits grill at different rates. Let the fruit cool.
  5. To your serving pitcher or bowl, add the brandy, the red wine, the simple syrup, and the lemon-lime soda. Stir lightly.
  6. Add the grilled fruit and the cinnamon sticks. Add the white wine. (Test the flavor—if it isn't sweet enough, add a little more simple syrup.)
  7. You can also top off each glass with a bit of white wine when serving (for the bubbles).
