Grilled Rib Eye Steaks with Blue Cheese

Go all out on the grill this summer with this rib eye steak topped with warm crumbled blue cheese and drizzled in a chive butter sauce.

- Season steaks with salt and pepper 30 minutes before you plan to cook them. Cover loosely with plastic wrap and allow it to sit at room temperature.
- Set grill to high. If using a charcoal grill, place coals to one side, allowing for an area of indirect heat. If using a gas grill, use only a few of the burners and leave the rest off for indirect heat.
- Lightly grease the steaks and position on the hottest part of the grill. Cover and cook for 2 to 3 minutes each side, until they are golden-brown. Transfer the steaks to indirect heat and top with crumble cheese. Cover again and cook for 2 to 5 minutes longer, depending on desired doneness.
- Remove steaks from heat and place on a a cutting board to rest. Cover with foil for 10 minutes. Stir together butter, chives and hot sauce. Pour over steak before serving.
