Grilled Rib Eye Steaks with Blue Cheese

Go all out on the grill this summer with this rib eye steak topped with warm crumbled blue cheese and drizzled in a chive butter sauce.

  1. Season steaks with salt and pepper 30 minutes before you plan to cook them. Cover loosely with plastic wrap and allow it to sit at room temperature.
  2. Set grill to high. If using a charcoal grill, place coals to one side, allowing for an area of indirect heat. If using a gas grill, use only a few of the burners and leave the rest off for indirect heat.
  3. Lightly grease the steaks and position on the hottest part of the grill. Cover and cook for 2 to 3 minutes each side, until they are golden-brown. Transfer the steaks to indirect heat and top with crumble cheese. Cover again and cook for 2 to 5 minutes longer, depending on desired doneness.
  4. Remove steaks from heat and place on a a cutting board to rest. Cover with foil for 10 minutes. Stir together butter, chives and hot sauce. Pour over steak before serving.
