Grilled Ranch Potatoes

These grilled baby potatoes are sprinkled with melted cheddar cheese, drizzled with ranch dressing and topped with fresh chives.

- Preheat the outdoor grill to medium. In a large bowl, toss together potatoes, olive oil, ranch seasoning, and black pepper.
- Thread potatoes onto wooden skewers, cut side down. Grill until tender and lightly charred, about 15-20 minutes. Take off the skewers and place on a half sheet pan lined with tin foil or parchment paper. Sprinkle with shredded cheese and place under the broiler for about 5 minutes, or until the cheese is melted.
- Drizzle with ranch dressing and garnish with fresh chives if desired. Enjoy immediately.
