Grilled Garlic Flank Steak with Avocado Corn Salsa

Savory herb flavor compliments fresh salsa with this juicy flank steak meal you can make at home this summer. Make sure to try it out this grilling season!

  1. Combine olive oil, garlic, chopped rosemary, thyme, oregano, salt and pepper in a large bowl.
  2. Place the flank steak in to bowl and let marinate for 1 hour or overnight.
  3. Preheat grill to high heat.
  4. Sear flank steak on high heat for 1-2 minutes per side and then move to indirect heat and let cook until desired doneness. For Medium rare, cook to 130-135 degrees.
  5. Remove steak from grill, cover with foil and let rest for 10 minutes.
  6. While the steak rests, prepare the avocado corn salsa in a medium size bowl. Combine avocado, tomatoes, corn, red onion, cilantro and lime juice. Mix until combined.
  7. Slice the steak across the grain and top with avocado corn salsa.
