Get ready to have your kitchen smelling like Christmas with this Eggnog Pound Cake recipe. With festive flavors of cinnamon, nutmeg and eggnog, your family is sure to feel a little holiday spirit when they bite into this sweet treat. And here’s a baking tip – if you want to make your pound cake ahead of time, just hold off on the final step with the orange glaze and save that for right before you’re ready to serve dessert.
Ingredients
Directions
- Preheat the oven to 350°F. Spray a 9-inch loaf pan with cooking spray and coat with 1 Tbsp. of flour, tapping out any excess. Set aside. In a medium bowl, whisk together the remaining flour, baking powder, salt, cinnamon and nutmeg.
-
In a large bowl, beat together the butter and sugar using a hand or stand mixer, until light and fluffy. Add in the eggs, one at a time, beating well after each addition. Mix in the vanilla. Add half of the dry ingredients, followed by half of the eggnog, mixing after each addition. Continue alternating until all the dry ingredients and eggnog have been incorporated, being careful not to overmix.
-
Transfer batter to the prepared loaf pan and then bake on the center rack for 50 to 55 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to finish cooling.
-
Make the glaze by combining the confectioners sugar and orange zest. Slowly whisk in the orange juice until the glaze is thick but pourable. Glaze the cooled cake and serve
