  1. Heat the oil in a large pot set over medium heat. Add the onion and cook for 4-6 minutes or until softened. Add the garlic and cook for 1 minute. Add the pork and potatoes and sauté for 3-4 minutes or until warmed through.
  2. Pour the chicken broth into the pot and season with salt and pepper to taste. Cover and bring to a boil. Reduce to a simmer and cook for 10-15 minutes or until potatoes are tender. Add the spinach and heavy cream and cook for 2-3 minutes until spinach is wilted.
