  1. Combine eggs, mayonnaise, red onion, and dill in a large bowl. Add salt, and season with pepper to taste. Refrigerate until ready to use.
  2. Use a 1” round biscuit cutter to cut circles out of the sandwich bread, cutting three circles per slice, making 18 total circles.
  3. If coloring the egg salad, divide the egg salad into four bowls, 1/2 cup of egg salad into each bowl. Add 2-3 drops of desired food coloring, and stir to mix the coloring in.
  4. Spoon just under 1/4 cup of egg salad onto one of the bread circles, and garnish with a small pinch of paprika, if desired.
  5. Top each mini sandwich with another bread circle, and serve immediately.
