What’s better than a gooey, melty grilled cheese? A grilled cheese with cheddar, spicy pimento cheese spread and bacon, stacked into an epic double-decker sandwich! Make your family’s dinner budget go further or impress your guests for less by making these tasty sandwiches a part of your game day spread.

- Add 1 cup shredded cheese, mayonnaise, pimentos and salt to a food processor or blender and pulse until combined. Transfer to a small bowl, cover and refrigerate for 1 hour.
- Arrange the slices of bread on a flat work surface. Spread butter over one side of each slice of bread. Evenly divide the remaining 1 1/4 cups of the shredded cheese and the bacon between two slices of bread on the non-buttered side. Top each with a buttered-side-up slice of bread.
- Heat a large skillet over medium heat and add the sandwiches. Cook until lightly golden brown. Flip the sandwiches and cook until toasted. Remove from the skillet, spread with the pimento cheese spread and top with remaining slices of bread.
- Cook the final side of the double-decker sandwich in the hot skillet until lightly golden brown and the cheese is melted. Serve immediately.
Recipe Tip: Substitute the bacon with thinly sliced tomatoes for a meatless option!"
