  1. In a large, non-stick, oven-safe skillet, melt the butter and add the apples. Cook over medium heat for about 3 to 4 minutes, stirring once or twice.
  2. In a bowl, whip together the eggs, the cream, the sugar, the rose water, and the apple pie spice, and mix well.
  3. Pour the mixture over the apples in the skillet. Stir lightly and let them continue to cook.
  4. Cook for 2 to 3 more minutes until the eggs are set. Don’t let the bottom burn, as that is going to be the top.
  5. If you feel the eggs need a bit more time to cook, pop the skillet in the broiler for a minute or two.
  6. When it’s finished cooking, carefully turn it out on to a large serving plate. Top with powdered sugar and orange zest.
