- In a large, non-stick, oven-safe skillet, melt the butter and add the apples. Cook over medium heat for about 3 to 4 minutes, stirring once or twice.
- In a bowl, whip together the eggs, the cream, the sugar, the rose water, and the apple pie spice, and mix well.
- Pour the mixture over the apples in the skillet. Stir lightly and let them continue to cook.
- Cook for 2 to 3 more minutes until the eggs are set. Don’t let the bottom burn, as that is going to be the top.
- If you feel the eggs need a bit more time to cook, pop the skillet in the broiler for a minute or two.
- When it’s finished cooking, carefully turn it out on to a large serving plate. Top with powdered sugar and orange zest.
