Citrus Orange Chicken

Chicken is one of the most versatile meats because it can be made so many different ways with so many flavors. Try this take on citrus orange chicken!

  1. TO MAKE THE SAUCE --
  2. Combine orange juice, soy sauce, ground ginger, garlic cloves, and crushed red pepper in a small sauce pan over medium heat. Allow it to cook for a couple of minutes until hot.
  3. Mix the tablespoon of cornstarch with two tablespoons of warm water, and whisk very well. Drizzle this mixture into the sauce, whisking to combine.
  4. Add the light brown sugar, and whisk well to combine. Bring the sauce to a gentle simmer, and allow to thicken for 4-5 minutes. Once thickened, remove from heat and stir in the orange zest. Set aside until ready to use.
  5. TO MAKE THE CHICKEN --
  6. Cut the chicken breasts into bite-size pieces.
  7. Whisk the eggs in a large bowl, and set near the stove top.
  8. Whisk the garlic powder, salt, pepper, corn starch, and flour in a separate large bowl. Set near the bowl with the eggs.
  9. Pour the vegetable oil in a large skillet so it comes about 1/3 up the sides of the skillet. Turn the heat to medium-high, and allow the oil to get hot. Once the oil is hot, drop a little piece of flour mixture into it. If it sizzles immediately, the oil is ready to use.
  10. Working in small batches, coat each of the chicken bites in egg, then in the flour mixture. Carefully place in the hot oil, and cook for 2-3 minutes per side until golden brown and cooked through.
  11. Repeat for all chicken bites. Place cooked chicken bites onto a baking sheet lined with a rack to allow them to drip any excess oil off and cool.
  12. Toss the crunchy chicken in the orange sauce, and top with sesame seeds or chopped green onion!
  13. NOTE -- If using large chicken bites, test a couple by cutting them in half to make sure they are cooked through after frying. If they seem slightly undercooked, pop them into a 350 F degree oven for 10-15 minutes to finish cooking!
