Cinnamon Bun Bites

These cinnamon bun bites are so warm and buttery you might want to double the recipe just to keep the family from fighting over who gets the last bite. This sweet start to the morning is perfect for Easter breakfast or weekend brunch and will have everyone coming back for more.

  1. Preheat the oven to 350 degrees then prepare the dough for the cinnamon bun bites. Combine the flour, baking powder and salt and whisk together. Add the cold butter and cut it in with a fork or knife until it's in pea-sized chunks. Then add ¾ cup of milk and mix the batter with a spatula just until combined. A few lumps are OK.
  2. Next, put 1 tablespoon of melted butter in the bottom of a 7x10 casserole dish or pie plate, making sure to grease the sides of the dish. Most of the butter will pool in the bottom. Then combine granulated sugar, ¼ cup brown sugar, and cinnamon and stir. Start forming the dough into balls roughly one inch in diameter and roll each one in the cinnamon-sugar mixture, placing them side-by side in the buttered dish.
  3. To the last tablespoon of melted butter, add ½ teaspoon of vanilla and whisk to combine. Pour over the balls and place in the middle of the oven for 20-25 minutes, depending on your oven.
  4. While the bites cook, make the cream cheese frosting by combining cream cheese, confectioner's sugar, 3 tablespoons of milk, and ½ teaspoon vanilla and use a hand mixer to blend.
  5. When the cinnamon bites are finished baking, let cool for 5 minutes, then pour the icing over the top and serve warm. Enjoy!
